Aperol Spritz

Prosecco, Aperol, soda, an orange slice, a big wine glass, a lot of ice. The Italian aperitivo that launched a thousand summer afternoons.

Ingredients

  • 90 ml prosecco
  • 60 ml Aperol
  • 30 ml soda water
  • 1 orange slice, to garnish
  • big ice

Instructions

  • Fill a large wine glass to the top with big ice. Do not skimp.
  • Pour in the prosecco first, then the Aperol, then the soda. That order keeps the colour layered for a second before you stir.
  • Stir once, gently, to keep the bubbles.
  • Drop in an orange slice. Serve.

Notes

3-2-1 is the official ratio: three parts prosecco, two parts Aperol, one part soda. Memorise it.
