Ingredients

  • 60 ml white rum Bacardi Carta Blanca or Havana Club 3 Year
  • 30 ml fresh lime juice
  • 2 tsp white sugar or 15 ml sugar syrup
  • 8-10 fresh mint leaves
  • 60 ml soda water cold, to top
  • crushed ice
  • mint sprig and lime wheel, to garnish

Instructions

  • Gently press the mint leaves and sugar in the bottom of a tall highball glass with the end of a wooden spoon. Bruised, not shredded, five seconds of pressing.
  • Add the lime juice and rum. Quick stir to dissolve the sugar.
  • Pack the glass three quarters full with crushed ice.
  • Top with cold soda water. Stir once from the bottom up to lift the mint through the drink.
  • Mound a little more crushed ice on top, slap a fresh mint sprig between your palms to release the oils and plant it with a lime wheel. Serve immediately.
