Bruised mint, white rum, lime and cold soda. The summer-barbecue cocktail that cuts through smoke, char and chilli like nothing else.

- 60 ml white rum Bacardi Carta Blanca or Havana Club 3 Year
- 30 ml fresh lime juice
- 2 tsp white sugar or 15 ml sugar syrup
- 8-10 fresh mint leaves
- 60 ml soda water cold, to top
- crushed ice
- mint sprig and lime wheel, to garnish
Gently press the mint leaves and sugar in the bottom of a tall highball glass with the end of a wooden spoon. Bruised, not shredded, five seconds of pressing.
Add the lime juice and rum. Quick stir to dissolve the sugar.
Pack the glass three quarters full with crushed ice.
Top with cold soda water. Stir once from the bottom up to lift the mint through the drink.
Mound a little more crushed ice on top, slap a fresh mint sprig between your palms to release the oils and plant it with a lime wheel. Serve immediately.
