- 60 ml bourbon (Bulleit or Woodford)
- 30 ml fresh lemon juice
- 20 ml simple syrup
- 1 egg white (optional, for the foam)
- 15 ml full-bodied red wine (shiraz)
Method
Dry-shake bourbon, lemon, syrup and egg white (if using) without ice for 10 seconds.
Add ice, shake again for 15 seconds.
Double-strain into a rocks glass over one large ice cube.
Pour red wine over the back of a spoon so it floats on top.
