- 30 ml London dry gin
- 15 ml fresh lemon juice
- 10 ml simple syrup
- 6 fresh raspberries
- 90 ml chilled champagne or sparkling wine
Method
Muddle raspberries with syrup in a shaker.
Add gin, lemon juice, ice. Shake.
Fine-strain into a flute.
Top with champagne. Garnish with a floating raspberry.
