Whisky Sour

Bourbon, lemon, sugar, egg white shaken into silk. Angostura bitters on top. A bar classic that is still best at home.

Ingredients

  • 60 ml bourbon
  • 30 ml fresh lemon juice
  • 15 ml simple syrup
  • 1 egg white about 20 ml
  • 3 dashes Angostura bitters to finish
  • 1 lemon twist or brandied cherry, to garnish

Instructions

  • Dry shake (no ice) the bourbon, lemon juice, syrup and egg white for 15 seconds to build foam.
  • Add a big scoop of ice and shake again for 15 seconds until very cold.
  • Double strain into a chilled rocks glass over one large ice cube, or up into a coupe.
  • Dash Angostura bitters across the foam. Drag a toothpick through to make a pattern if you like.
  • Garnish. Serve.

Notes

Egg white makes the texture. If you skip it, shake a little longer and expect a thinner drink.
