The Pina Colada
Blended white rum, coconut cream and frozen pineapple. Serious tropical drink engineering, not the sugary apology version.

- 60 ml white rum
- 60 ml fresh pineapple chunked and frozen
- 45 ml coconut cream or Coco Lopez cream of coconut
- 15 ml fresh lime juice
- 1 cup ice
- pineapple wedge and frond, to garnish
Freeze the pineapple chunks in a zip-lock bag, ideally overnight.
Combine the rum, coconut cream, lime juice, frozen pineapple and ice in a high-powered blender.
Blend on high for 30 to 40 seconds until thick and smooth.
Taste. More lime if it's too sweet, a little more frozen pineapple if it's too thin.
Pour into a chilled hurricane glass and garnish with a pineapple wedge and frond. Serve immediately.
