Invented in the early 1990s at Tommy’s Mexican Restaurant in San Francisco, the Tommy’s Margarita ditches the triple sec and lets the tequila do the talking. Three ingredients: 100% agave tequila, fresh lime juice, a drizzle of agave syrup. No Cointreau, no salt rim, no flourish.
It’s the Margarita for people who actually like tequila. The agave syrup echoes the agave in the spirit itself, pulling the drink into deeper, cleaner territory. Drink it in a coupe. Don’t salt the rim.
What changes from the Classic Margarita
Orange liqueur out. Agave syrup in. No salt on the rim. The lime ratio climbs slightly to compensate for the cleaner profile.
What to pour it alongside
Lighter Mexican food: ceviche, tostadas, raw fish tacos. Anywhere you want the agave to lead, not compete with spice.
