How we write a recipe

Every recipe has three things on the page, not one.

First, the method: grams, minutes, a pan size we actually own. Second, the bottle match: wine, cocktail, or beer, chosen because it works with the dish, not because it sounded fancy. Third, the swap list: what to do if the bottle shop doesn’t have the exact thing.
