Pink Paloma

Fresh watermelon juice or muddled raspberries push the Paloma into summer-party territory: pinker, slightly sweeter, very easy to drink too much of.

Why you are pouring this tonight

The Pink Paloma is the Paloma made with fresh ruby grapefruit instead of pink, plus a small pour of crème de cassis sunk to the bottom for the sunset effect. Tequila, ruby grapefruit, lime, soda, cassis, salt rim. Looks like a watercolour, drinks like a Paloma that has decided to go on holiday.

Real Briottet crème de cassis. The supermarket cordial is sugar with food colouring. Use 100% agave blanco tequila and fresh-squeezed ruby grapefruit. Build over a tall glass full of ice: tequila and grapefruit first, lime, top with cold soda. Then drizzle the cassis slowly over the back of a barspoon so it sinks to the bottom. Salt rim. Grapefruit wedge on the rim. Pair with fish tacos, ceviche, salt-and-pepper squid.

Grapefruit soda halved, replaced with fresh watermelon juice or muddled raspberries.

Grilled prawns, feta-watermelon salad, lamb chops off the barbecue.

Ingredients
  

  • 60 ml blanco tequila
  • 15 ml fresh lime juice
  • 60 ml fresh watermelon juice
  • 75 ml pink grapefruit soda
  • Salt for the rim, watermelon wedge to garnish

  1. Salt half the rim of a highball. Fill with ice.
  2. Add tequila, lime juice, watermelon juice.
  3. Top with grapefruit soda. Stir once. Garnish with a small watermelon wedge.
