The Matador is a tequila Daiquiri with pineapple.
Why you are pouring this tonight
The Matador is a tequila Daiquiri with pineapple, and it is one of the cleanest, most refreshing tequila cocktails you can make at home. Tequila, fresh pineapple juice (the bottled stuff is too sweet and lacks the bite), lime, a small kiss of simple syrup. Shaken hard, double-strained, into a chilled coupe. Drinks like a holiday postcard from a hotel pool that you were not staying at.
Fresh pineapple juice is the technique. Buy a whole pineapple from your local greengrocer, peel and core it, blend, push through a fine sieve. Yes, it is a Sunday-morning project for what is supposed to be a quick drink, but the difference between fresh and bottled pineapple juice is the difference between a drink and a memory. Use a 100% agave blanco. Lime juice fresh. Coupe properly chilled (in the freezer twenty minutes before serving). Pair with fish tacos, ceviche, anything with fresh chilli.
What to pour it alongside
Fish tacos, ceviche, anything with fresh chilli.
Notes
Fresh pineapple juice only, the bottled stuff is too sweet and lacks the bite. Press it through a fine strainer to remove the foam.
