The Rosita is the tequila Negroni nobody talks about, which is funny because it is a better drink than most of the cocktails people talk about constantly. Equal parts reposado, Campari, sweet vermouth, with a small splash of dry vermouth to lift the whole thing. Earthier than a gin Negroni, smokier than a Boulevardier, served over a single big rock with an expressed orange peel. A drink for people who want to start dinner an hour earlier than the reservation says.

The reposado matters more than people pretend. A blanco gets bullied by the Campari. Use a Cazadores Reposado at the entry tier, an El Tesoro Anejo if you want the drink to whisper instead of speak. Stir, never shake. Stir until your hands hurt. Strain over the biggest piece of ice you can fit in the glass. Express the peel skin-down, drop it in. Drink it before the first round of bread arrives.

What to pour it alongside

Aged hard cheese, prosciutto, before any meat-heavy dinner.
