The Cantarito is a Mexican tequila highball traditionally served in a clay (cántaro) cup, which keeps the drink colder for longer because the porous clay holds the chill. Tequila, three citrus juices (grapefruit, orange, lime), pinch of salt, cold grapefruit soda, salt rim, slices of all three citrus floating like a fruit emoji parade. The drink that proves a Mexican holiday in the kitchen.
The clay cup is real. You can buy small terracotta clay cups online in Australia (Casa Iberica in Carlton stocks them) or substitute a tall slim glass and just accept the drink will warm up slightly faster. Cold Squirt or Jarritos grapefruit soda. Use 100% agave blanco tequila. Salt the rim. Build the cocktail in the cup over plenty of ice, top with the soda. All three citrus wedges hanging on the rim like guests waiting to come in. Pair with tacos al pastor, ceviche, anything that came off a Mexican grill.
