A short note on tequila and mezcal cocktails

Tequila is blue agave distilled twice in Jalisco. Mezcal is agave roasted in underground pits and distilled in the mountains of Oaxaca. The difference is smoke: tequila is clean, bright, citrus-led; mezcal is earthier, smokier, deeper. A good home bar has both. Don Julio Blanco or Patron Silver for Margaritas and Palomas. Del Maguey Vida for the mezcal float on top. Espolon Reposado for the nights you want oak and vanilla instead.
