Why you are pouring this tonight
A whisky sour with a red-wine float. Shake the drink, strain it over ice, then gently pour a tablespoon of full-bodied red (shiraz, zinfandel) over the back of a spoon so it floats on top. The visual is stunning; the extra layer of tannin lifts the drink.

- Dry-shake bourbon, lemon, syrup and egg white (if using) without ice for 10 seconds.
- Add ice, shake again for 15 seconds.
- Double-strain into a rocks glass over one large ice cube.
- Pour red wine over the back of a spoon so it floats on top.
