A whisky sour with a red-wine float. Shake the drink, strain it over ice, then gently pour a tablespoon of full-bodied red (shiraz, zinfandel) over the back of a spoon so it floats on top. The visual is stunning; the extra layer of tannin lifts the drink.

Ingredients
  

  • 60 ml bourbon (Bulleit or Woodford)
  • 30 ml fresh lemon juice
  • 20 ml simple syrup
  • 1 egg white (optional, for the foam)
  • 15 ml full-bodied red wine (shiraz)

Method
  1. Dry-shake bourbon, lemon, syrup and egg white (if using) without ice for 10 seconds.
  2. Add ice, shake again for 15 seconds.
  3. Double-strain into a rocks glass over one large ice cube.
  4. Pour red wine over the back of a spoon so it floats on top.
