The Elderflower 75

Add 15ml St-Germain to the classic French 75.

Why you are pouring this tonight

The Elderflower 75 is the French 75 with Saint-Germain elderflower liqueur replacing the simple syrup. Slightly floral, slightly sweeter, slightly more 11.30am-on-a-Saturday-than-Friday-evening. The drink for somebody who has decided the regular French 75 is too dry.

Saint-Germain is sweet, so reduce the lemon slightly to compensate. Use a London Dry gin (Beefeater, Tanqueray). Real champagne or a Tasmanian sparkling (Jansz, Arras). Build gin, lemon and Saint-Germain in a shaker with ice, shake briefly, double-strain into a chilled flute, top slowly with cold champagne, lemon twist expressed over the surface. Pair with brunch, smoked trout, asparagus that has been roasted.

Simple syrup reduced; St-Germain added for sweetness and floral lift.

What to pour it alongside

Ricotta and herb tarts, asparagus, grilled prawns with lemon.

  • 30 ml London dry gin
  • 15 ml St-Germain elderflower liqueur
  • 15 ml fresh lemon juice
  • 5 ml simple syrup
  • 90 ml chilled champagne or sparkling wine

  1. Shake gin, St-Germain, lemon juice and syrup with ice.
  2. Strain into a flute.
  3. Top with champagne. Garnish with a lemon twist.
