The stirred coconut drink.
Why you are pouring this tonight
The Coconut Old Fashioned is the stirred coconut drink and the cocktail to make for somebody who says they don’t like coconut. Aged rum, coconut cream as the sweetener, three dashes of Angostura, expressed orange peel over a single big rock. Tastes like a sunset over a country pub, except the country is somewhere with palm trees.
Stir, never shake. The whole point is the cocktail’s clarity. Use an aged rum with proper character (Appleton 12, El Dorado 12, Mount Gay Black Barrel). The coconut cream takes a few seconds longer than syrup to incorporate; stir for forty seconds in a mixing glass with cold ice. Strain over a single big rock, express the orange peel skin-down over the surface, drop the peel in. Pair with a square of dark chocolate, a wedge of aged cheese, the back end of a long dinner.
What to pour it alongside
End of a meal. Replaces dessert. Pair with a square of dark chocolate.
Notes
Stir, don’t shake, you don’t want this drink cloudy. The coconut cream takes a few seconds longer than syrup to incorporate.
