Tequila Negroni

Confusingly identical to the Rosita without the dry vermouth.

Why you are pouring this tonight

The Tequila Negroni is the Negroni for people who want the Negroni but cannot face another gin Negroni this week, which describes most weeks for most adults. Equal parts reposado tequila, Campari, sweet vermouth. Stirred over ice, strained over a single big rock, expressed orange peel. Earthier than gin, with the agave doing the same vegetal lift the juniper would otherwise do. Confusingly, this is also called a Rosita in some bars (Rosita has a splash of dry vermouth on top, which is the only difference).

Reposado, never blanco. Blanco gets bullied by the Campari and the drink loses its corners. Cazadores Reposado at the everyday tier, El Tesoro Anejo at the dinner-party tier. Carpano Antica for the sweet vermouth (the supermarket Cinzano is half the price and three-quarters of the wine). Stir for forty seconds. Single big rock of clear ice. Express the orange peel skin-down so the oils land on the surface. Pair with prosciutto, aged parmesan, the start of a Sunday lunch that is going to take five hours.

What to pour it alongside

Aged cheese, charcuterie, pre-dinner.

The strict equal-parts ratio matters here, alter it and you slip into Boulevardier or Rosita territory.
