Honey Tequila Sour

The Whisky Sour template with reposado tequila and honey syrup.

Why you are pouring this tonight

I’d like to say this drink came from a bartender on Calle Madero in Mexico City. It came from a Sunday afternoon in Surry Hills when I was out of triple sec and refused to walk to Dan Murphy’s. Tequila reposado, lime, honey syrup, egg white. A sour that does what a sour does, but with the agave doing some of the heavy lifting and the honey rounding the edges where the cocktail would otherwise end up sharp.

The reposado matters. Blanco gets lost in this drink (the egg white smothers it). Use a barrel-aged reposado that has actual structure: Cazadores Reposado at the everyday end, El Tesoro at the dinner-party end, Patron Reposado at the showing-off end. Dry shake first, hard, for fifteen seconds, to build the foam. Wet shake with ice for another twelve. Three drops of Angostura on the foam at the end to draw a line.

What to pour it alongside

Tacos, ceviche, fresh fish.

Notes

Reposado has enough structure to carry the egg white foam. Blanco gets lost.
