The Honey Mojito is a Mojito with honey replacing the simple syrup. The honey rounds the mint differently to sugar, giving the drink a softer, more autumnal feel even on a hot afternoon. The honey is sweeter than simple syrup so reduce the amount slightly if the drink feels heavy. Use a 3:1 honey-to-hot-water syrup made ahead. Don’t overmuddle the mint, bruise it. Bruising releases the oil; crushing releases the chlorophyll, which is bitter. Use Plantation 3 Stars or Havana Club 3 for the rum.
