Use half sweet vermouth and half dry vermouth instead of all sweet. The drink becomes drier, more herbal, more food-friendly. ‘Perfect’ in the cocktail sense means ‘split vermouth,’ not necessarily better — it’s a different drink.

  • 60 ml rye whisky (Bulleit Rye)
  • 15 ml sweet vermouth
  • 15 ml dry vermouth
  • 2 dashes Angostura bitters
  • Lemon peel to garnish

  2. Stir for 20-30 seconds.
  3. Strain into a chilled coupe.
  4. Express lemon peel over the drink; drop it in.
