Amaretto carries the sweetness so you don’t need syrup. Add a rinse of bourbon and you’ve got a balanced, almond-scented sour. Jeffrey Morgenthaler’s version in Portland helped rehabilitate amaretto’s reputation in the 2000s.

  • 45 ml amaretto (Disaronno)
  • 15 ml bourbon
  • 30 ml fresh lemon juice
  • 1 egg white
  • 3 dashes Angostura bitters

  1. Dry-shake without ice 10 seconds.
  2. Add ice, shake 15 seconds.
  3. Double-strain over fresh ice in a rocks glass.
  4. Angostura bitters dashed on the foam; drag a toothpick through for pattern.
