The Campari Spritz is the Aperol Spritz’s older, more bitter cousin. The drink the Italians order when they have decided the Aperol Spritz is too sweet and the Negroni is too strong. Campari, prosecco, soda, ice, orange wedge. Properly bitter. Properly orange. Properly Italian.
Use the driest prosecco you can find. Campari is bitter and sweet at the same time; the dry prosecco is what keeps the drink from collapsing into a sugar bomb. Build over a wine glass full of ice: Campari first, prosecco second, soda last. Generous orange wedge, not a slice. Pair with bresaola, gorgonzola, prosciutto, anything that has spent time near salt and air.

- Pour Campari, then prosecco, then soda (3-2-1 ratio).
