Amaretto carries the sweetness so you don’t need syrup. Add a rinse of bourbon and you’ve got a balanced, almond-scented sour. Jeffrey Morgenthaler’s version in Portland helped rehabilitate amaretto’s reputation in the 2000s.
What changes from the Whisky Sour
Amaretto becomes the base; bourbon is a 15ml supporter. No sugar needed.

- Add ice, shake 15 seconds.
- Double-strain over fresh ice in a rocks glass.
- Angostura bitters dashed on the foam; drag a toothpick through for pattern.
