A Hugo made with dry white vermouth (Dolin or Lillet) in place of prosecco. Slightly drier, more savoury; loses the bubbles but gains complexity. Best served over a lot of ice.

Prosecco out. Dolin dry vermouth (or Lillet Blanc) in.

Ingredients
  

  • 30 ml St-Germain elderflower liqueur
  • 90 ml Dolin dry vermouth (or Lillet Blanc)
  • 60 ml soda water
  • 1 sprig fresh mint
  • 1 slice lime

  1. Fill a balloon glass with ice.
  2. Add St-Germain and vermouth.
  3. Top with soda. Slap mint; drop in with lime slice.
