The Hugo Bianco is the Hugo Spritz made with white wine instead of prosecco, and it is the variation Italians order when they have decided the regular Hugo is too sweet. Elderflower syrup, white wine, soda, ice, mint, lime. Drier, less sweet, more grown-up. The drink for the second hour of a long Saturday lunch.
Use a dry Italian white (Pinot Grigio from Friuli, Vermentino from Sardinia) instead of prosecco. Cold soda water from the fridge. Real elderflower syrup (Bottle Green, Belvoir, or Saint-Germain liqueur if you want to cheat). Build over ice in a wine glass: elderflower syrup first, white wine second, soda last. Slap-mint sprig on top, lime wheel. Pair with antipasto, prosciutto, a focaccia from an Italian deli on a Saturday afternoon.
