Why you are pouring this tonight
The Saint-Germain Spritz is the cocktail you make on the first Friday afternoon you can sit on a balcony in only a t-shirt without commenting on it. Saint-Germain elderflower liqueur, prosecco, soda, ice, lemon wheel, mint sprig that has been slapped between your hands first to release the oil. It tastes like a hedge in flower at a wedding in Berry, except you are at home in your kitchen and the only person watching is your partner who has just opened the cheese.
Use the driest prosecco you can find. Saint-Germain is already sweet, sweet enough that the wrong prosecco turns the drink into a Lindor ball. Dal Zotto Pucino out of King Valley is the right call at $20. The Champagne version (with brut nature champagne) is the dinner-party flex when someone is celebrating something that involves ducks. Garnish with the slap-mint and a thin lemon wheel. Open the cheese.
What to pour it alongside
Pre-dinner with goat’s cheese, smoked trout, or honey-roasted nuts.
