Why you are pouring this tonight

The Pomegranate Mule is the brunch Mule, the one you order at 11.30am on a Sunday at a place in Bondi where everyone is wearing linen and pretending they don’t know each other from yesterday. Vodka, real pomegranate juice (POM Wonderful, not the pre-sweetened cocktail mixers), fresh lime, cold ginger beer, pomegranate seeds floating, lime wheel and slap-mint. Pink as a Sydney sunset over Centennial Park.

Real pomegranate juice or nothing. The cocktail-mixer version is sugar with a memory of pomegranate and it cheapens the whole drink. POM Wonderful comes in the small bottle at any decent supermarket. Use 30mL of it, not more, otherwise the drink turns sticky. Cold ginger beer to top, real Bundaberg. Float the seeds last so they sit on top like jewellery. Pair with lamb tagine, anything with za’atar or sumac, smoked eggplant on toast.

What to pour it alongside

Lamb tagine, slow-roasted lamb shoulder, anything with za’atar or sumac.

Notes

POM Wonderful or any 100% pomegranate juice works, the pre-sweetened cocktail mixers are too cloying.
