Why you are pouring this tonight
This is the Black Boulevardier, which is a Boulevardier with Averna in place of the sweet vermouth, in homage to the Black Manhattan. Bourbon, Campari, Averna amaro, expressed orange peel. Darker than a Boulevardier, more bitter than a Black Manhattan, the drink for somebody who has read every cocktail menu in the country and is now ready for the next chapter.
Averna is Sicilian amaro and the right amaro for this swap. Around forty dollars at a decent bottle shop. Use a sturdy bourbon (Buffalo Trace, Wild Turkey 101). Stir for forty seconds in a mixing glass with cold ice, strain over a single big rock in a heavy rocks glass, expressed orange peel skin-down over the surface. Pair with smoked brisket, charcuterie, the start of an evening with somebody who wants to talk about books.
What changes from the Boulevardier
15ml Amaro Averna added alongside the Campari and sweet vermouth.
What to pour it alongside
Steak, dark chocolate, aged cheese.

- Stir all with ice for 30 seconds.
- Strain into a rocks glass over one large ice cube.
- Garnish with orange peel.
