The Honey Old Fashioned is the Old Fashioned with honey syrup in place of demerara, which is to say, slightly more floral, slightly less sharp. The bourbon does the bourbon thing and the honey rounds the corners where the demerara would otherwise leave a bite. Tastes like a porch in late autumn in Beechworth, except you are at home in your kitchen.
The trick is the honey syrup. Don’t try to dissolve raw honey in the cocktail; you will get a clump at the bottom and a thin drink on top. Make a 3:1 honey-to-hot-water syrup ahead of time, keep it in a sterilised jar in the fridge. Use a Beechworth honey or a Tasmanian leatherwood from a producer who lists their hives on the label. Bourbon is your call (Buffalo Trace at the everyday tier, Eagle Rare at the upgrade). Stir, single big rock, expressed orange peel, sprig of fresh thyme that has been slapped first. Pair with roast chicken, herbed lamb, autumn cheese plate.
