Raspberry Mojito

Why you are pouring this tonight

Muddle a handful of raspberries (or strawberries) in with the mint and lime. The drink turns soft pink, the fruit adds brightness that takes the edge off the rum, and it becomes the easiest crowd-pleaser at any summer party.

6-8 fresh raspberries (or 2 strawberries, quartered) muddled with the mint.

Ingredients
  

  • 60 ml white rum (Plantation 3 Stars or Havana Club)
  • 30 ml fresh lime juice
  • 15 ml simple syrup
  • 10 leaves fresh mint
  • 8 fresh raspberries
  • 60 ml soda water

  1. In a highball glass, muddle mint, raspberries, lime juice and syrup.
  2. Fill with crushed ice. Add rum, stir.
  3. Top with soda. Garnish with extra mint and a raspberry.
