Why you are pouring this tonight
Italian summer in a balloon glass. Limoncello instead of Aperol, more prosecco, plenty of mint. Sweeter than the Aperol Spritz, but somehow still drinkable in a long way on a hot day.
What changes from the Aperol Spritz
Aperol out. Limoncello in. Fresh mint and a lemon slice replace the orange.

- Pour limoncello, prosecco, soda.
- Slap the mint sprig to release oils; drop in. Add lemon wheel.
