The Ruby 75

Why you are pouring this tonight

The Ruby 75 is the French 75 with crème de cassis or a small pour of Chambord adding a ruby tint and a soft red-berry note. The cocktail for somebody who has decided the regular French 75 is too pale and that the colour of a drink should imply something is happening.

Use real Briottet crème de cassis or a quality Chambord (the supermarket “raspberry liqueur” is sugar with a memory of fruit). 5mL is plenty. Use a London Dry gin and a real champagne. Build gin, lemon, crème de cassis in a shaker with ice, shake briefly, double-strain into a chilled flute, top slowly with very cold champagne, lemon twist expressed over the surface. Pair with brunch, eggs benedict, the kind of Saturday morning that ends up turning into a long lunch.

  • 30 ml London dry gin
  • 15 ml fresh lemon juice
  • 10 ml simple syrup
  • 6 fresh raspberries
  • 90 ml chilled champagne or sparkling wine

  1. Muddle raspberries with syrup in a shaker.
  2. Add gin, lemon juice, ice. Shake.
  3. Fine-strain into a flute.
  4. Top with champagne. Garnish with a floating raspberry.
