Why you are pouring this tonight

The Hugo Zero is the no-alcohol Hugo Spritz, which sounds like a sad concept and turns out to be a perfectly drinkable cocktail when you are the designated driver, the pregnant guest, or the one person at the wedding who has decided to take Sober October seriously and live to tell about it.

The technique is replacing the prosecco with a non-alcoholic sparkling wine (Brown Brothers Prosecco Spumante NV is widely available; Lyre’s also makes a non-alcoholic option). Real elderflower syrup (Bottle Green or Belvoir). Cold soda. Build over ice in a wine glass, slap-mint sprig, lime wheel. Pair with brunch, antipasto, a Sunday afternoon when somebody else is doing the driving.

What changes from the Hugo Spritz

St-Germain becomes non-alcoholic elderflower cordial. Prosecco becomes non-alcoholic sparkling. Everything else stays.

What to pour it alongside

Same as the Hugo: light antipasti, salads, soft cheeses.

  • 30 ml elderflower cordial (Bottlegreen or similar)
  • 100 ml non-alcoholic sparkling wine
  • 60 ml soda water
  • 1 sprig fresh mint
  • 1 slice lime

  1. Fill a balloon glass with ice.
  2. Add elderflower cordial, top with non-alcoholic sparkling and soda.
  3. Slap mint; drop in with lime slice.
