Why you are pouring this tonight
A bartender in Milan in 1972 grabbed the wrong bottle and poured prosecco instead of gin into a Negroni. He kept serving it. Sbagliato means ‘mistaken’ in Italian. It’s been on menus ever since.
Fizzier, lower ABV, easier to have two of. Sits perfectly at a long Italian lunch where the classic might be too assertive. Use good prosecco, not the $9 bottle.
What changes from the Negroni
Gin out. Prosecco in. Everything else stays. Result: lighter, sparkling, slightly sweeter.
What to pour it alongside
Antipasti: prosciutto, bresaola, olives, focaccia. A whole Italian lunch in a glass.

- Pour Campari and sweet vermouth directly into the glass.
- Top with chilled prosecco. Gently stir once.
- Garnish with an orange wheel.
