The Business is Sam Ross’s modern classic from Milk and Honey, New York, 2003. Same era as his Penicillin and his Gold Rush, which between them are responsible for half the modern cocktail menu in this country. Gin, lime, honey syrup. Three ingredients. Three minutes. A small drink with a large opinion.

The technique is precision in the ratios. 60mL gin, 20mL lime, 20mL honey syrup. No drift. Use a robust London Dry (Beefeater, Tanqueray, Plymouth). Floral or contemporary gins (Hendrick’s, Monkey 47) get lost. Make a 3:1 honey syrup ahead of time. Shake hard with ice for twelve seconds, double-strain into a chilled coupe, lime twist on top expressed over the surface. Pair with goat’s cheese, smoked trout, the first round of a dinner that is going to involve a lot of good bread.

Notes

Use a robust London Dry, Beefeater or Tanqueray. Floral gins (Hendricks) get lost.
