The 50/50 Martini

Equal parts gin and dry vermouth.

The Fifty-Fifty Martini is the Martini for somebody who has decided the modern dry Martini is wrong and the original was right. Equal parts gin and dry vermouth, stirred over ice, strained into a chilled coupe, lemon twist or olive depending on the mood. The vermouth carries actual weight here, which means a fresh bottle of Carpano or Dolin matters more than the gin choice.

Vermouth is wine and goes off in two months in the fridge once opened. Buy a small bottle, use it within sixty days, replace it. Use Plymouth gin or Tanqueray. Stir for forty-five seconds (longer than a regular Martini because the vermouth needs the dilution). Strain into a chilled coupe, lemon twist expressed over the surface. Pair with smoked salmon, oysters, the start of a long Italian dinner.

Equal parts gin and dry vermouth (not 5:1 or drier).

What to pour it alongside

Olives, cured meat, anchovy toast. A proper dinner aperitif.

Ingredients
  

  • 45 ml London dry gin
  • 45 ml Dolin dry vermouth
  • 2 dashes orange bitters
  • Lemon peel or olive to garnish

  2. Strain into a chilled coupe.
  3. Garnish with a lemon peel or an olive.
