The Daiquiri Float

Make a classic daiquiri, strain it over ice in a rocks glass, then float a layer of aged dark rum on top.

Why you are pouring this tonight

The Daiquiri Float is what bars do when somebody asks for a Daiquiri but it is forty degrees outside and the lime juice alone is not going to cut it. A regular shaken Daiquiri poured over crushed ice, with a small scoop of lime sorbet floating on top that slowly melts into the drink. Looks like a holiday. Drinks like a Daiquiri.

The sorbet is the trick. Use a real lime sorbet (Connoisseur or Drumstick make decent ones, or a small-batch one from the Italian deli). Build the Daiquiri shaken (white rum, lime, simple syrup), strain over crushed ice in a coupe, a small scoop of sorbet on top. The sorbet acts like an ice cube that gives the drink a second wind as it melts. Pair with hot afternoons, pool, the kind of summer day that makes any other choice feel inadequate.

Ingredients
  

  • 60 ml white rum
  • 25 ml fresh lime juice
  • 15 ml simple syrup
  • 15 ml Appleton Estate Signature rum (to float)

  1. Shake white rum, lime and syrup with ice.
  2. Strain into a rocks glass with one large ice cube.
  3. Slowly pour dark rum over the back of a spoon so it floats on top.
