A short note on gin cocktails

Gin is the spirit Australian bartending has quietly taken over. Four Pillars led the charge from the Yarra Valley, Archie Rose built the Sydney scene, and a dozen small distilleries turned native botanicals into a national style. Pepperberry, lemon myrtle, finger lime, strawberry gum – ingredients that taste specifically like this country. Then there are the classics: a London Dry like Tanqueray for the drinks that want juniper out front. The Martini, the Negroni, the French 75, the Gin and Tonic.
